Whole 30 Round 2

So, I said I was going to do a mini W30 and do a 15 day stretch instead.  Well, the first 7 days went well, and then it really fell apart after that!  Now I am really feeling sluggish and yucky again!  I slowly went back to old eating habits.  It really is amazing how what I eat affects me.  The differences are so obvious.

Surprisingly I was able to run my small part in the NJ Law Enforcement Torch Run last Friday.  It was a small victory for me considering I dropped the ball with training for it and didn’t prepare for it like I should have.  The last time I did an official run was 2 1/2 years ago.  I almost dropped out knowing I wasn’t ready, but didn’t feel good doing that since I made the committment to my “coach” that I’d do it.  It was a small 3.5 mile run in the rain.  I expected I was going to need to stop and hitch a ride with the officers that rode along with us……..but I didn’t.  I ran from the Medford Lakes PD to the Medford Shop Rite all in one piece.  It was mostly mental that I got through it.  It helped having encouraging words from “coach” who ran along with me.  I am happy I stuck with it and hope to run more of the leg next year.  Most of my team mates ran the entire 20 miles that day, in torrential rain.  When I met up with them at ML PD at 9:30, they had already been running since 7am from Marlton, and continued to run after I stopped, onto Lumberton.  They are awesome.  I have a very encouraging “coach” who got me to do this, always saying I could and believing in me.  It makes all the difference.  He’s a very positive influence on many people in the community, from his martial arts with kids to kick boxing and running with adults.  He had me up early on Saturday mornings to go run with him.  That’s huge for me!  He pushes himself and others to do their best and strive to go further.  It’s his influence that is making me sign up for more runs…….  because, what do you know……I can do it after all.  My family was really proud of me too and my husband surprised me with flowers for my small feat.

So I decided to do another Whole 30 way sooner than expected.  I really wanted to start yesterday, but I am taking my mom out for her birthday today, and I am letting myself eat whatever.  Lately when I go visit my parents I bring my own “special” food and pass up going out with them.  Well, not today.  Not only is it her birthday, but she just completed at home radiation for thyroid cancer and has been stuck at home in isolation for a week.  She needs to get out and celebrate!  There’s a lot to be thankful for!!

I am looking forward to eating W30 again.  I have some yummy meals lined up the first week including a citrus marinated london broil, apple bacon pork burgers, and mustard lime chicken.  I will continue to blog, but not sure about keeping up with pictures.  We’ll see.  I do expect some bumps during the next 30 days.  We have a couple of graduation parties, 4th of July, and our 21st wedding anniversary on June 27.  I feel very positive about it though and looking forward to feeling super healthy again 🙂  Hope everyone has a beautiful day.  Be and stay grateful.

Mini Whole 30

I can’t believe I am doing this again already.  Yes, just 15 days this time, but wow!!  What brought me to this decision?  Our party last Sunday.  It was awesome, wonderful, and way too much fun 🙂  I don’t regret anything I ate or drank either!  BUT, I did feel pretty yucky the next day.  Not hangover yucky.  I just felt physically “off” and unhealthy.  I figured I could do a mini challenge just to reset my body and feel more fit.  I know I can do it now that I completed a Whole 30, so why not??

To make it easier as far as all the cooking this time around, I am not making separate dinners for my family.  I made so many delicious healthy dinners during the 30, there really isn’t any reason to not serve them to everyone.  I won’t make anything that I know for sure my family won’t care for.  This will be a good thing!

I started yesterday, on Tuesday.  Dinner was buffalo chicken meatloaf and really, really good.  My son didn’t think it was great, but he ate it.  My husband and daughter loved it.  Only thing is I’ll have to make 2 next time so there are leftovers for lunch the next day.  I also picked up a new leafy green…….mache.  It’s a green from California also known as lamb’s lettuce.  It is described as nutty, but to me it was pretty bitter and strong.  My daughter loved it!

Tonight I made the Damn Fine Chicken which I made during my first week on the 30.  Man, is this addicting!!  I used 5 drumsticks and 2 breasts this time.  It was just my daughter and I tonight, so there is plenty for lunch tomorrow 🙂

The rest of the week’s dinners will be paleo krabby patties, asian meatballs, and ginger garlic tilapia.  We will most likely grill on the weekend, so whatever that ends up being will be fine!  Breakfasts will remain my usual favorites with the exception of an egg and asparagus casserole I made early this morning.

Now for Sunday’s festivities!  First let me say, the best part of the day was the company.  Our best friends, Steve and Faye and their 2 kids came over.  We always have such a blast when we get together.  We have a pretty good size yard  so we set up a few games to play throughout the day.  Corn hole was in one area of the yard, and ladder golf set up in another part of the yard.  Music playing, good food and good company!  Our 4 teenagers even spent a good amount of time outside with us which was really nice 🙂

Steve and Faye live 5 minutes from us, and we all met when our kids were in preschool.  They are family to us.  We’ve done everything together and this summer we are bringing them with us to the shore.

We’ve been renting this awesome beach block house in LBI for a few years now (except when we go to Bar Harbor, ME).  So, this house has more than enough room for another family, sooooo they are coming with us!!  Yay!  The house also has an inground pool and is the perfect house for entertaining.  We have been having the best vacations at the shore.  We all just love it.  The typical day is coffee on the rooftop deck overlooking the ocean or on the beach.  Breakfast, beach, lunch, nap, cocktails, pool time, dinner, deck and or pool.  i LOVE vacation!!

Back to Sunday’s “dirty” food!  So, to drink I made fresh pineapple margaritas……..oh, oh, so good.  We also had a variety of summer brews ~ Victory Summer Love, Corona Light, Goose Island Summertime, and Wachusett Blueberry.  The blueberry was my favorite.  Light and crisp with a fresh blueberry taste that wasn’t overwhelming.

Food wise we had ginger garlic steamed clams, beachy shrimp, bacon cheeseburger sliders, regular cheeseburgers, bow tie pasta salad and hot dogs.  I did NOT eat all of that.  I did ok with clams, shrimp, ONE slider, and some pasta (it had been so long since I had any pasta).

The real problem was dessert.  My sweet tooth got revenge on me from abstaining for so long.  I made a s’mores pie that I didn’t even touch.  We had a fruit tart from Wegman’s that was out of this world.  I had 2, yes TWO pieces.  OMG.  It was so good.  Did I mention it was delicious? Not only that, but Faye made something I like to call “Crack on a Cracker”.  It is so basic and so damn evil.  It’s just Club crackers covered in an evil mixture of sugar and butter then dipped in chocolate.  WTF??  OMG, I don’t even know how much of those I ate.  It was evil, pure evil.  I loved it.  I paid for that with pretty bad stomach pains later that night.

The last few hours of the night were spent around our fire pit sipping on beer, telling each other hysterical stories, and laughing our a**es off.   We were out there until about midnight when our lovely neighbor decided to come outside and turn on his leaf blower……..REALLY??  Whatever 🙂

So now do you see why I am doing a Whole 15?  I had 1 day of clean eating yesterday and already I felt great this morning and the weight gain from Sunday is gone 🙂

Onward!!

The Final Four

Finally catching up on my posts!  My challenge was completed on Tuesday and I’m just now gonna write about it!  Such a busy time of year, I’ve been too tired to post at night.  There’s art shows, driver’s testing, tennis finals, and all the regular daily busy-ness!!

This morning my son took his road test and passed the first time 🙂 Yay, new anxiety for me.  Thank God the age for driving in New Jersey is 17 and not 16.  I still think THAT’S too young!  He turned 17 in November, but I didn’t feel he was ready to test (neither did he!)  He wasn’t pushing it either, so he practiced a lot since then.  I finally realized I can’t put it off any longer.  He needs to be able to drive now.  It’s not his driving I am worried about.  It’s all the other drivers.  So it’s done.  He is licensed, and I am very happy for him.  Another milestone.  Another rite of passage.

So, yes.  My first W30 Challenge is finished!  I really did it!  I am so, so happy I got through it.  It had its ups and downs, especially with cravings and prepping which I complained about, BUT overall…..it was so worth it.  Coming out of this, I feel as healthy as ever, I am sleeping better, I lost a dress size, I lost inches, have more definition in a few areas, and dropped 8 pounds.  I am really proud of myself.

So, now what?  My plan was to just go back to watching my calories and keep doing the exercise I am doing: kick boxing, running, and bootcamps.  When the morning of my first day off the challenge came around, you know what I wanted for breakfast?  Eggs, baby kale, and chorizo.  A W30 compliant breakfast.  That’s what I had.  I just really love how I feel eating this way.  It did something to me.

Another thing that I noticed on a daily basis is that I wasn’t counting down the hours to my next meal because I was so satisfied with what I was eating!  There is so much freedom in that!  Any other plan I tried I would never be full from a meal.  It was always, “When can I eat next?”  Well, with this way of eating, I experienced none of that.  In fact there were days when lunch or dinner rolled around, and I just wasn’t hungry yet.  I still lost weight and inches!  How awesome is that?

I was just complaining last week about the prep and wanting a cupcake.  I just don’t think I’ll feel good going back to another way or plan of eating.  So, I think I’ll follow a mainly Paleo way of eating and see what happens.  I collected a ton of recipes over the past month and the majority are meals I know my family will like too.  That takes some of the hassle away.  Also, Paleo isn’t as strict as Whole 30 and that will be nice.

We are having a party this Sunday and I plan to fully enjoy it!  Like I said, I’ll follow mainly Paleo.  I will allow certain things and just see where it takes me.  I’ll have many yummy good options this Sunday such as ginger steamed clams, and beachy shrimp, but we’ll also have fresh pineapple margaritas and lots of great beer.  Oh yes, and desserts……s’mores pie, fruit tart from Wegman’s, and ice cream goodies.  I’ll resume Paleo the next day!

Day 27, Saturday

Breakfast: 2 fried eggs, baby kale, brussel sprouts, and a leftover crab cake.

Day 29, Monday

Breakfast: 2 fried eggs, chopped up london broil, kale, brussels, and a sprinkling of hot sauce

Day 30, Tuesday, The Last Day

I had a full morning of kick boxing with an hour long boot camp, so breakfast and lunch turned into brunch early afternoon!

Brunch:  Scrambled eggs, brussels, and leftover roasted chicken.  Divine!!

Ok, this looks nothing like the pic on the website, but it was really good.  My sauce didn’t thicken at all, so it drained to the bottom of the serving bowl.  It was a delicious combo of sweet and spicy.  Loved using the fresh orange juice and zest!  This would be awesome with shrimp.

That’s the end of this journey.  The challenge anyway.  I think as I continue to try new recipes I’ll try and post them.

Days 24, 25, and 26

Gotta catch up on this blogging!  I am nearing the end of the W30 challenge, and I feel like I am experiencing things backwards compared to what I read other’s experiences are.  I am pretty frustrated, but trying to remember how well I’ve done the past 26 days and all the benefits that have come with it.

Everyone else says the first week is the hardest.  For me, weeks 1 and 2 were the easiest and the best.  I lost the weight those first 2 weeks too.  Week 3 came along with the cravings and feeling grumpy.  Plus, the weight stopped coming off.  Yes, I broke the rule of no scale.  I weigh myself every week, oh well.  Week 4 comes along and still no weight loss, and that’s with intense hour long kick boxing burning @ 650 cals 4-5 x’s/week. plus running, plus a boot camp thrown in here and there.  Whoever said women have trouble losing weight in their forties was not lying!!  It sucks that you have to kill yourself with cardio and practically eat nothing to lose a pound.

Another thing I read people say is they lose their cravings entirely??  What??  Not this chick.  I want a beer and a cupcake, STAT!  And an ice cream sundae.

There are also those who are in no hurry for the challenge to be done…….um, I feel so done.  I now can’t wait until I finish.  I am just so tired of spending so much money and spending so much time prepping.  I am cooking multiple meals every day since the rest of my family isn’t doing this with me.  It’s not that the food and meals are bad….no, no, no!  My food has been delicious.  I just need a personal chef to cook it all for me.  I’m tired.  But perhaps that is because I play music really loud and dance around while I’m cooking??

Ok, having said all that, I have dropped an entire clothing size.  I lost 8 pounds eating a ton of food.  That weight loss occurred the first 2 weeks though and has now stopped 😦  BUT, I am truly happy to be wearing smaller and more fitting clothes.  So I have no doubt that even though the weight loss stopped, I am totally losing inches in a big way!  I am happy with the change and people are noticing.  That is awesome.  I’m looking pretty darn good 🙂

I’ve also never slept so good.  I read  about this happening, and it’s really true.  I usually wake up at least 3 times during the night and sometimes have trouble getting back to sleep.  I have been sleeping very soundly all through the night during the challenge, and that has been wonderful!!

Dinner:  More meatballs and cauliflower!  Hey, it was really good!

Thursday, Day 25 ~

Breakfast: 2 fried eggs, sauteed baby kale and chorizo

Lunch: More meatballs.  You know that recipe made a lot, so….

Dinner: Ginger and cilantro Baked Tilapia served on a bed of baby spring mix/spinach with the last of the cauliflower rice.

I used organic chicken broth instead of the wine, and coconut aminos instead of soy sauce.  This was really tasty.

Friday, Day 26 ~

Breakfast: A scrambled up mix of eggs, brussel sprouts, sun dried tomatoes, and chopped up meatball!

Lunch:  Leftover Ginger and Cilantro Baked Tilapia (I made 2 filets the night before)

Dinner: Krabby Patties!!  Yum, yum, yum!!  These were great and my first time making homemade paleo mayo and first time cooking with coconut flour.  I LOVE this flour.  I want to make cookies with it 🙂

Now onto the weekend!!  Early run tomorrow then kbox class!  Missing a family get together because I don’t want to be tempted to cheat and fail when I am so close to being done.  I don’t know if people get my level of commitment to this challenge, but it’s what I need to do for me.  It’s not like a wedding or graduation or anything like that or anything I committed to before I started W30, so I am good with it.  I’ve chosen to avoid gatherings and not go out to eat these 30 days because I don’t want to set myself up to fail.

Day 23, what?

Yay, yay, yay!  I am in Week 4, and though it hasn’t been perfect I am soooo benefiting from how well I’ve done over all, and that is something to be proud of!!  I must confess i keep thinking about what I am going to eat when I am finished the challenge.  I want to pick 1 thing that I will allow myself to have………Talienti’s caramel cookie crunch gelato?  A java chip frappuccino?  A slice of pizza?  The gelato is winning so far.  My sweet tooth is really getting to me!  i’m already planning to make a s’mores pie and pineapple margaritas Memorial Day weekend when we get together with friends.  Yeah, my sweet tooth is a problem.

No more “dirty” food talk……

Fantastic kick boxing work out today then I headed over to the park for a run on my own.  It went very well!  The day continued on later with a win for my son’s high school tennis team in the States, and now they are going on to semi’s.

Breakfast: Had to be quick and did a usual mash up of fried egg, brussel sprouts, and sun dried tomatoes.  Simple yet highly satisfying.

This ended up pretty delicious though the picture is poor and very much lacking in color.  It was much better than it looks, trust me!  The meatballs alone were just ok.  They didn’t taste Asian at all.  I got 48 meatballs out of this recipe so I was able to freeze a lot of them for another time.  The “rice” was wow….very good and surprisingly so.  It was a great compliment to the meatballs.  It reminded me more of a couscous than a rice.  Eating the rice with the meatballs was a lot better than eating the meatballs alone.  Oh, and I did have more than shown on the plate because it was so good 🙂
