So obviously I don’t blog much on here anymore.  It’s so time consuming!!  If you have an Instagram account, you can follow me there at aquamarinejenny.  It’s been much easier to post pics of meals this way.  Definitely less writing involved.  There are a ton of people to follow who live the paleo/whole 30 lifestyle, so you can find great new meal ideas.  That’s the main reason I’m on there after my whole 30 mentor suggested it.  She’s awesome!  Hope to see you there!

Happy Hump Day

I thought I’d take advantage of the few free hours I have today and write a bit.  How is it that I am so much busier during the summer??  I am really looking forward to our week away in a couple of weeks.  I plan to thoroughly relax!!

I’m still eating Whole 30, though I’m not doing a specific timed challenge.  I plan my meals based on Whole 30.  I don’t do it perfectly by any means, but it’s a lot better than how I was eating before with constantly counting calories in and out.  It’s surprising and funny how certain new ways of eating have become good habits now.

For instance, my morning coffee.  I never thought I could enjoy my coffee without a sweetener, specifically Bailey’s hazelnut creamer.  Well, I can, and I can’t believe I enjoy my coffee with just a teaspoon of full fat canned coconut milk with a sprinkle of cinnamon now.  After my first W30 challenge, I went and bought some Bailey’s creamer.  After using it again for a few days I realized I just didn’t feel good using it and went back to the coconut milk 🙂  I love it and I feel like i am getting the true rich flavor of coffee now.

The other product I can’t live without is coconut oil.  I cook everything in it.  I still use olive oil from time to time, which is W30 compliant, but coconut oil is my fat of choice!

A new discovery I recently caved and bought is Pink Himalayan Sea Salt.  Wegman’s has a 10oz bottle with a built in adjustable grinder.  It is supposed to have many healthy benefits as opposed to regular table salt, so thought I’d give it a try.  I’ve been cooking with it this week……tastes like salt 🙂

I did finally buy the Well Fed cookbook I’ve heard so much about.  All in all, I am disappointed in it.  I expected a lot more protein/dinner type meals in it.  Plus, I feel the majority of the ones that are in there, just aren’t that great sounding.  What I have made has been good and will definitely make again, but I think I would have been just fine getting recipes off of the internet.

One recipe from Well Fed that I just loved and will be a staple is the Country Captain Chicken.  Oh my, the chicken turned out so tender and the meat just fell apart.  It was so good.  I did tweak it to my liking by omitting the curry powder and using chicken breasts instead of thighs.  It was delicious and my family loved it.

This past Monday I made the meat and Spinach muffins (forget the actual name), from Well Fed.  What I like is that the author gives different variations of these muffins to make, so I made the Asian ones.  They consist of ground pork, Chinese 5 spice powder, coconut aminos (another product I use consistently), spinach, onions, and egg.  These turned out great.  I love when I can make a big batch of something and use it in different meals for a few days.  In fact I used 2 of the muffins in my breakfast this morning.  I scrambled 2 organic brown eggs with some organic baby kale leaves, then crumbled up 2 of the muffins and mixed it all up.  Deliciousness!!

All Is Well

Too busy to blog!  Summer is so busy with lots of good things going on.  I guess I got tired of posting everything I am eating, PLUS there have been bumps in the road on the challenge once again.  It’s ok though.  It’s summer and just way too many events, gatherings, etc.  Not really a great time to do the challenge.  For the most part I cook W30 foods.  I am really used to it now.  But I do want to get at least 28 straight days of continuous W30 and that’s just so tough right now.  I’ll just keep plugging along!  Happy 4th!!

Do Over

Today is day 1, again.  Contemplated what to do yesterday, which included eating whatever I felt like having.  Got it out of my system, I hope, and starting over today.  I want to do it again more than not, so let’s go 🙂  A great workout this morning will get me started.  Never, ever give up.

Or Maybe Not…..

FAIL!  Total fail.  Started on Saturday with little cheats that increased every day.  Why am I not as committed this time around?  I get a craving and just give in to it.  I stay on plan all day….with every meal.  Then, night time eating came back.  So bad too.  Blah!  Today I am contemplating my next move and will read things to get me committed again.  Will I  start over or forget about it?  At least I am loving my work outs!

Whole 30 Round 2

So, I said I was going to do a mini W30 and do a 15 day stretch instead.  Well, the first 7 days went well, and then it really fell apart after that!  Now I am really feeling sluggish and yucky again!  I slowly went back to old eating habits.  It really is amazing how what I eat affects me.  The differences are so obvious.

Surprisingly I was able to run my small part in the NJ Law Enforcement Torch Run last Friday.  It was a small victory for me considering I dropped the ball with training for it and didn’t prepare for it like I should have.  The last time I did an official run was 2 1/2 years ago.  I almost dropped out knowing I wasn’t ready, but didn’t feel good doing that since I made the committment to my “coach” that I’d do it.  It was a small 3.5 mile run in the rain.  I expected I was going to need to stop and hitch a ride with the officers that rode along with us……..but I didn’t.  I ran from the Medford Lakes PD to the Medford Shop Rite all in one piece.  It was mostly mental that I got through it.  It helped having encouraging words from “coach” who ran along with me.  I am happy I stuck with it and hope to run more of the leg next year.  Most of my team mates ran the entire 20 miles that day, in torrential rain.  When I met up with them at ML PD at 9:30, they had already been running since 7am from Marlton, and continued to run after I stopped, onto Lumberton.  They are awesome.  I have a very encouraging “coach” who got me to do this, always saying I could and believing in me.  It makes all the difference.  He’s a very positive influence on many people in the community, from his martial arts with kids to kick boxing and running with adults.  He had me up early on Saturday mornings to go run with him.  That’s huge for me!  He pushes himself and others to do their best and strive to go further.  It’s his influence that is making me sign up for more runs…….  because, what do you know……I can do it after all.  My family was really proud of me too and my husband surprised me with flowers for my small feat.

So I decided to do another Whole 30 way sooner than expected.  I really wanted to start yesterday, but I am taking my mom out for her birthday today, and I am letting myself eat whatever.  Lately when I go visit my parents I bring my own “special” food and pass up going out with them.  Well, not today.  Not only is it her birthday, but she just completed at home radiation for thyroid cancer and has been stuck at home in isolation for a week.  She needs to get out and celebrate!  There’s a lot to be thankful for!!

I am looking forward to eating W30 again.  I have some yummy meals lined up the first week including a citrus marinated london broil, apple bacon pork burgers, and mustard lime chicken.  I will continue to blog, but not sure about keeping up with pictures.  We’ll see.  I do expect some bumps during the next 30 days.  We have a couple of graduation parties, 4th of July, and our 21st wedding anniversary on June 27.  I feel very positive about it though and looking forward to feeling super healthy again 🙂  Hope everyone has a beautiful day.  Be and stay grateful.

Mini Whole 30

I can’t believe I am doing this again already.  Yes, just 15 days this time, but wow!!  What brought me to this decision?  Our party last Sunday.  It was awesome, wonderful, and way too much fun 🙂  I don’t regret anything I ate or drank either!  BUT, I did feel pretty yucky the next day.  Not hangover yucky.  I just felt physically “off” and unhealthy.  I figured I could do a mini challenge just to reset my body and feel more fit.  I know I can do it now that I completed a Whole 30, so why not??

To make it easier as far as all the cooking this time around, I am not making separate dinners for my family.  I made so many delicious healthy dinners during the 30, there really isn’t any reason to not serve them to everyone.  I won’t make anything that I know for sure my family won’t care for.  This will be a good thing!

I started yesterday, on Tuesday.  Dinner was buffalo chicken meatloaf and really, really good.  My son didn’t think it was great, but he ate it.  My husband and daughter loved it.  Only thing is I’ll have to make 2 next time so there are leftovers for lunch the next day.  I also picked up a new leafy green…….mache.  It’s a green from California also known as lamb’s lettuce.  It is described as nutty, but to me it was pretty bitter and strong.  My daughter loved it!

Tonight I made the Damn Fine Chicken which I made during my first week on the 30.  Man, is this addicting!!  I used 5 drumsticks and 2 breasts this time.  It was just my daughter and I tonight, so there is plenty for lunch tomorrow 🙂

The rest of the week’s dinners will be paleo krabby patties, asian meatballs, and ginger garlic tilapia.  We will most likely grill on the weekend, so whatever that ends up being will be fine!  Breakfasts will remain my usual favorites with the exception of an egg and asparagus casserole I made early this morning.

Now for Sunday’s festivities!  First let me say, the best part of the day was the company.  Our best friends, Steve and Faye and their 2 kids came over.  We always have such a blast when we get together.  We have a pretty good size yard  so we set up a few games to play throughout the day.  Corn hole was in one area of the yard, and ladder golf set up in another part of the yard.  Music playing, good food and good company!  Our 4 teenagers even spent a good amount of time outside with us which was really nice 🙂

Steve and Faye live 5 minutes from us, and we all met when our kids were in preschool.  They are family to us.  We’ve done everything together and this summer we are bringing them with us to the shore.

We’ve been renting this awesome beach block house in LBI for a few years now (except when we go to Bar Harbor, ME).  So, this house has more than enough room for another family, sooooo they are coming with us!!  Yay!  The house also has an inground pool and is the perfect house for entertaining.  We have been having the best vacations at the shore.  We all just love it.  The typical day is coffee on the rooftop deck overlooking the ocean or on the beach.  Breakfast, beach, lunch, nap, cocktails, pool time, dinner, deck and or pool.  i LOVE vacation!!

Back to Sunday’s “dirty” food!  So, to drink I made fresh pineapple margaritas……..oh, oh, so good.  We also had a variety of summer brews ~ Victory Summer Love, Corona Light, Goose Island Summertime, and Wachusett Blueberry.  The blueberry was my favorite.  Light and crisp with a fresh blueberry taste that wasn’t overwhelming.

Food wise we had ginger garlic steamed clams, beachy shrimp, bacon cheeseburger sliders, regular cheeseburgers, bow tie pasta salad and hot dogs.  I did NOT eat all of that.  I did ok with clams, shrimp, ONE slider, and some pasta (it had been so long since I had any pasta).

The real problem was dessert.  My sweet tooth got revenge on me from abstaining for so long.  I made a s’mores pie that I didn’t even touch.  We had a fruit tart from Wegman’s that was out of this world.  I had 2, yes TWO pieces.  OMG.  It was so good.  Did I mention it was delicious? Not only that, but Faye made something I like to call “Crack on a Cracker”.  It is so basic and so damn evil.  It’s just Club crackers covered in an evil mixture of sugar and butter then dipped in chocolate.  WTF??  OMG, I don’t even know how much of those I ate.  It was evil, pure evil.  I loved it.  I paid for that with pretty bad stomach pains later that night.

The last few hours of the night were spent around our fire pit sipping on beer, telling each other hysterical stories, and laughing our a**es off.   We were out there until about midnight when our lovely neighbor decided to come outside and turn on his leaf blower……..REALLY??  Whatever 🙂

So now do you see why I am doing a Whole 15?  I had 1 day of clean eating yesterday and already I felt great this morning and the weight gain from Sunday is gone 🙂
